If you’re grilling sausages, we recommend cooking over indirect heat to prevent flare-ups (so, turn on the right side burner, pre-heat the BBQ, and cook them on the left side.) Flare-ups can lead to an unpleasant carbon flavour on the surface of the meat.

Timing is everything when it comes to grilling. It is important to know how long to cook each type of meat to achieve the perfect results. Overcooking the meat can result in dry and tough meat, while undercooking can lead to foodborne illnesses.

It is important to note that the cooking time may vary depending on the thickness of the meat and the heat of the grill. Therefore, it is always best to use a thermometer to ensure that the meat is cooked to the correct temperature.

3. Flip

Flipping the meat is an important part of grilling. It helps to ensure that the meat is cooked evenly on both sides. However, it is important not to flip the meat too often as this can cause it to dry out. As a general rule, it is best to flip the meat only once. This will ensure that it is cooked evenly and retains its juices. It is also important to use a spatula or tongs to flip the meat, as using a fork can pierce the meat and cause it to lose its juices. Don’t attempt to flip until the first side is thoroughly seared - raw or partially cooked meat surface will stick to the grill, causing rips and tears when lifted. The meat will lift off the grill more cleanly once the outer protein is fully cooked.

4. Rest

Cooked meats, especially those cooked over high heat like a Grill, should be rested before slicing and serving. Once at your desired doneness (or ideally, a few degrees lower - as grilled meats will “carry-over” a few degrees as the heat from the meat surface continues to move into the centre) remove the meats from the grill and place on a wire rack or resting tray in a room-temperature spot. Cover loosely with aluminium foil. Let the meat rest for about half the amount of time it was cooking - so a steak grilled for 16 minutes should be rested for 8 minutes, and so on.
If the meat cools down too much, give it a very quick sear on both sides (20 seconds or so) to gently warm the outside before slicing and service.
This resting technique will allow the juices to redistribute back through the entire cut of meat, leading to a juicier finished product. Meat that is sliced immediately after cooking will lose more moisture as the juice concentrated in the centre immediately pour out of the slices.
