Whipped Feta Crostini with ‘Nduja Honey

Here’s a simple and delicious canape idea!


First, make a batch of ‘Nduja Honey. Try equal parts honey (we love using a local brand like “Good Morning Honey,” available at Meuwly’s!) and ‘Nduja, a spreadable, spicy salami (try the Calgary-made packaged ‘Nduja from VDG Salumi, also available at Meuwly’s.) Stir together in a small pot over medium heat, cooking until the ‘Nduja is slightly melted and thoroughly mixed into the honey. Keep warm and set aside.

Then, whip a good quality feta cheese in your food processor with olive oil and black pepper.

Thinly slice some red onion, halve some grape tomatoes, and tear some fresh mint leaves. Combine the onions, mint, and tomato, seasoning with salt, pepper, olive oil, and lemon juice. Allow to macerate for 30 minutes.

Toast a sliced baguette or sturdy sliced bread in butter until lightly browned and crispy. Spread the whipped feta over the crostini. Top with a small amount of the tomato/onion mixture. Then, drizzle with the warm ‘Nduja honey. Finish with a fresh mint sprink and a pinch of crunchy bee pollen.
