Summer Salad with Honey-Orange Dressing
This is a great chance to be creative - we like to use fresh heritage greens with small pieces of kale, spinach, and whole leaves of soft herbs like mint and basil. We garnish our summer salad with watermelon, orange segments local “Rockridge Dairy” chevre cheese, shaved fresh fennel, and toasted sunflower seeds or almonds.
For the dressing:
15 mL Meuwly’s Honey Mustard or Dijon
10 mL Liquid Honey
30 mL Apple Cider Vinegar
60 mL Fresh Orange Juice
125 mL Olive Oil
large pinch of fresh Orange Zest
Salt and pepper to taste
Combine all ingredients in a jar with a tight lid, and shake until well mixed!
